These bone-in pork chops came from BC8000 — a Red Wattle heritage hog born at Cedar Break Farm and raised on open pasture at Base Camp Farm & Ranch in Rusk, Texas, supplemented with Non-GMO, soy-free supplemental feed. Red Wattle is a rare American heritage breed prized for exceptional marbling and a deep, old-fashioned pork flavor that commercial pork has largely lost.

The bone keeps moisture in and adds flavor as it cooks. Season generously, sear over high heat, finish in the oven or on indirect grill heat. Pull at 145°F — a hint of pink is correct and intentional.
