Lamb

Pasture-raised sheep meat from Base Camp Farm & Ranch. "Lamb" is our category name for all sheep-derived meat — but we harvest at two different stages, and the eating experience is distinct:

  • Lamb — harvested young (under 12 months). Mild, tender, delicate flavor. The cuts most people know: chops, rack, leg.
  • Mutton — harvested mature (12+ months). Richer, deeper flavor. Excellent for slow braises, stews, and ground preparations.

Both are raised on open East Texas pasture with no added hormones or antibiotics.
